Alfalfa is a versatile food for people. Its a legume related to clover, beans, and licorice. Alfalfa's young leaves can be used in salads or as steamed greens.
Alfalfa is high in calcium and other minerals like vitamins B, E, D, C, D and K. With its mild grassy taste, dried alfalfa is refreshing as a tea, or you can consume the dried powder in food or in capsules. Capsules are often taken as a diuretic and to lower high cholesterol.
